Kærnemælkskoldskål: Cold Butter Milk Soup

Koldskål is a thing we danes eat all the time in the summer. Either as dinner, desert or just a quick snack. It's just the best thing ever. 



Ingredients:
  • 1000ml buttermilk (1 quart or 4 cups)
  • 500ml plain yogurt (2 cups)
  • 100g sugar (1/2 cup)
  • 2 eggs
  • 1 tsp vanilla sugar
  • Juice and zest from 1 lemon
Top with fresh strawberries, crackers or granola. 



Directions:
  1. With a handmixer, beat the eggs with sugar and vanilla sugar for 1-2 minutes.
  2. Add the buttermilk and mix well. 
  3. Add the yogurt and fold.
  4. Add juice and zest. If needed, add more sugar.
  5. Let sit in the refrigerator for 1-2 hours. Stir before serving.

Brunch Picnic

The weather has been just amazing the last couple of weeks here in Utah, so today my two sweet host sisters and I had a picnic in the back yard where we ate brunch.
Brunch is probably one of my favorite meals. I mean breakfast is amazing, and when you combine it with lunch, so you can have twice as much food, and both savory and sweet things, then isn't it just perfect?


Here is what we made:

Scrambled eggs (3 eggs, 1/4 cup milk, salt and pepper. Scramble on a pan) and sliced tomatoes, sprinkled with salt.


Smoothie


Fresh strawberries from the garden and orange slices



Yogurt Parfait:
2 * 1/3 cup yogurt
2 tbsp granola
2*1 tbsp frozen blueberries
1 tsp honey
7-8 mixed nuts

Directions:
Take a cup and fill it with 1/3 cup of yogurt. Add granola and 1 tbsp frozen blueberries. Add second layer of yogurt and top with the rest of the blueberries, chopped nuts and honey.

Strawberry Power Smoothie

Smoothies are the best. Especially after a 9 mile run and you just need some quick energy! This is one of my favorite recipes. Mostly because I love strawberries hehe.


Ingredients:

1 container strawberry greek yogurt
1 cup almond milk
1 scoop vanilla protein powder
1 cup frozen strawberries
1 frozen banana

Directions:
Mix everything in a blender. Serve.

Vanilla Frozen Yogurt with Banana

I have a love for ice cream, and even more for frozen yogurt, so here is a super healthy recipe for some delicious homemade ice cream, which is perfect for every occasion!


Ingredients:
1 frozen banana
1/2 cup vanilla greek yogurt
1/2 cup vanilla soy milk or vanilla almond milk.

Directions:
Blend all ingredients in a blender until smooth and serve immediately.

Orange Creamsicle Milkshake

Mmm... I love milkshakes, and I especially love fruity healthy ones! This recipe I found on instagram, and it was just perfect. So fresh and fruity this lovely afternoon.


Ingredients:
2 oranges
1 frozen banana
1/2 cucumber
1/2 cup greek yogurt
1 cup almond milk
dash of cinnamon
1/2 cup ice

Directions:
Blend all ingredients in a blender and blend until smooth. Serve cold and fresh.

Coconut Milkshake

This totally dairy-free ice cream is just so good you won't believe it. It has plenty of sweetness from the bananas, and the coconut milk gives it the most creamy moisture. I lightened it up with some unsweetened almond milk, just because it was a bit heavy. We don't have an ice cream maker, so when I had to freeze it, it didn't turn out very good, but just as a shake or dipping it was really good.


Ingredients:
2 frozen bananas
1/2 can coconut milk
1/2 cup unsweetened almond milk

Directions:
Place the coconut milk in the refrigerator over night. 
Blend frozen bananas until it has a creamy consistency. Add the coconut milk. It should have an almost hard consistency after it has cooled down in the fridge. Add almond milk and blend until all combined. You can add more or less almond milk whether you want it more creamy or more like a shake.

Strawberry Smoothie

We had bought some fresh strawberries here the other day, so I figured it would be super yummy to make a breakfast smoothie with fresh strawberries. Since it's not exactly strawberry season they were a lithe bit sour, but that was just perfect since we were out of greek yogurt, so they gave the perfect balance between the sweet banana and sour strawberry.


Ingredients:
1/2 banana
3-4 big strawberries
1/2 cup almond


1/2 frozen blueberries
1/2 cup ice cubes
Normally I would add about 1/4 - 1/2 cup of greek yogurt

Directions:
Mix all ingredients in a blender and pour into one glass.

Hazelnut Chocolate Mocha

Sometimes I think I have my own little Starbucks in my kitchen, haha. I do have my Starbucks recyclable cup that I use all the time for tea and other yummy hot drinks. 
Today I decided to make my own version of the Chocolate Mocha using a hazelnut coffee, and hazelnut coffee creamer, and it turned out super delicious!


Ingredients:
1 cup hazelnut coffee
1/2 cup almond milk
1 tsp hazelnut coffee creamer
2 tsp unsweetened cocoa powder
Ekstra sweetener of choice

Directions:
Stir the cocoa powder into about 1 tbsp of the almond milk until there are no lumps in it. Add the rest of the almond milk. Make the coffee and stir in the almond milk and sweetener, and creamer and heat up for about 1,5 minute in the microwave.

Berry Smoothie

Who doesn't love to wake up in the morning to a yummy smoothie? I do at least. There is just some kind of freshness over it, that makes the whole day better. This smoothie I used almond milk and a some greek yogurt to add some protein also don't forget those healthy green leafs, you won't even taste them, and they're super good for you! My only sweetener is from the fruit and berries, natures own beauty if you ask me.


Ingredients:
1 peeled orange
1 banana
1 cup almond milk
1/2 cup plain greek yogurt
1 cup mixed berries
A handful spinach
1 cup ice cubes

Directions:
Mix all ingredients in a blender. Pour into 4 glasses, and serve immediately.

Gingerbread Latte

One thing that I think is pretty funny is that I've learned to like coffee since I came to Utah, the only place in the world probably where drinking coffee isn't the norm, haha. Maybe that's why I've started to like it, because you don't really have access to it as much. I still don't like the plain brewed coffee, but i love Cafe Latte and other things with coffee flavor, so here is one of my favorite recipes for cafe latte.


Ingredients:
1 cup almond milk
1/2 tsp dried ground ginger
1/2 tsp ground cinnamon
1/2 tsp molasses
1/2 cup fresh brewed coffee

Directions:
Mix almond milk, ginger, cinnamon, and molasses and heat up in a microwave for about 1,5 minute. Make the coffee, and mix with almond milk.

Homemade Eggnog

Last night my host sister had some crazy cravings for eggnog... Hmm I thought, that is really easy to make homemade. Let's do it! It is pretty much the simplest thing in the world and super delicious!


Ingredients:
4 egg yolks
1/4 cup sugar
4 cups milk

Directions:
Whisk egg yolks and sugar in a mixer till it has a thick white consistency. Add milk and whisk until it's all stirred up. That's it!
