Pizza Tortillas

A healthy pizza? Yes please! This delicious pizza made on a crust of tortillas is a great healthier alternative if the kids are craving pizza. This is the first time I tried to make it, and it was so simple and tasted so good! And everybody can make your own personal one with the things they like!
Definitely not the last time we get this!

Start out by cutting vegetables. Use any kind you like:
Peppers, Spinach, Onion, Mushrooms, Olives, Avocado, Carrots, Artichoke, Pepperoni, Ham, Cheese, Meatballs, anything you like!


Start out by spreading tomato paste or some kind of tomato/pizza sauce on the tortilla. Put on a dry pan and start out by adding cheese, and then all the things you would like and top with a little more cheese and fold the tortilla on the middle.


Cut in half and serve.


Enjoy!

What's for Lunch Today?

Today I got to enjoy this really delicious wrap with basil pesto and chicken. Mmmm... One of my favorite things in the world is pesto, and it really tasted awesome in a wrap with the chicken.

Ingredients:
Whole wheat tortilla
Baked chicken breast
1 tsp basil pesto
1/4 cup mozeralla cheese
1 tomato
spinach

Directions:
Spread the pesto on a tortilla, and layer with chicken breast, cutter tomato, mozzarella and spinach. Roll up, and enjoy!



Healthy Banana Cupcakes

Today I just couldn't stand having these two very ripe bananas lying on the counter any more! They just had to be used, so I decided to make some pretty delicious Banana, chocolate, peanut butter cookies with only gluten-free flour. Every time I make them, they turn out differently, because it's one of those things where you just use whatever you feel like, and the recipe never turns out exactly the same. 


Ingredients:
2 ripe bananas
1 cup of oat flour
1/2 cup almond flour 
1/2 cup greek yogurt
1/4 cup unsweetened cocoa
1/4 cup all natural peanut butter
1/3 cup soy milk
1 egg
1/4 tsp baking soda
1/4 cup cream cheese (optional)

Filling:
1/4 cup semi-sweet chocolate chips
1/4 cup creamy peanut butter
1/2 tbsp unsweetened cocoa
Dash of almond milk

For the filling:
Put all ingredients in a microwave safe bowl and heat up in microwave until smooth and stir together.

For the cupcakes:
Mash bananas and mix all other ingredients in. Fill up 1/3 with the dough and place a dollop of the filling in the middle of each cupcake and cover up. Bake for about 20 minutes at 350 degrees F

My Lunchbox

Everyday at school I bring my own lunch. I do that because I don't wanna eat the gross school food they give us. So everyday I have some kind of a salad, wrap, or some kind of leftovers or whatever. I love having my little salad container, which both have a room for a cooler, knife and fork, and a little space for the dressing and everything. 

Well, I thought I would give you a little sneak peak on what my salad container contained today!


Start out with a base of lettuce, spinach or other kind of greens.


Add all of your favorite veggies, and add some kind of protein, either meat, cheese, or whatever you like, and some fresh herbs is always delicious!


I like to have some kind of crunch in my salad as well. Today I used these homemade, roasted sunflower seeds. I just worsted them on a dry pan with a little bit of soy sauce. So good!


Now you only need to add your favorite dressing, or just eat it plain as it is! 


Hope this will inspire you to start making your own homemade lunch. It really is so much better, I promise! All you need is just a little creativity and a good container!

Kransekage

Every year on New Year's Eve we get this cake called kransekage when the clock strikes 12 in Denmark. It is actually very simple to make. The icing was a little tricky in the beginning, but you will soon get the hold of it! 

Ingredients:
1 lb marzipan
150 g powdered sugar
2 egg whites

Icing:
2 cups puwdered sugar
1 tbsp water

Semi-sweet chocolate chips

Directions: 
1. Marzipan and powdered sugar kneads together in a mixer or by hands. Pour in egg whites on at a time to get the wanted consistency. 
2. Place in fridge a couple of hours or next day.
3. Separate the mixture into 4 different portions and make long "sausages", every one a little smaller, and connect to make circles. Make one ball for the top. 
4. Place the circles and the ball on a baking sheet and carefully press on the circles to make a surface. 
5. Bake the circles at 350 F about 15 minutes. 
6. Make the icing and decorate the circles making "stripes" on the top. 
7. Melt chocolate chips in microwave and dip the circles in chocolate. 
8. When the chocolate has hardened you can assemble the pieces to make a tower. 
Enjoy with some kind of sparkling wine or cider at midnight!
