Healthy Banana Cupcakes

Today I just couldn't stand having these two very ripe bananas lying on the counter any more! They just had to be used, so I decided to make some pretty delicious Banana, chocolate, peanut butter cookies with only gluten-free flour. Every time I make them, they turn out differently, because it's one of those things where you just use whatever you feel like, and the recipe never turns out exactly the same. 


Ingredients:
2 ripe bananas
1 cup of oat flour
1/2 cup almond flour 
1/2 cup greek yogurt
1/4 cup unsweetened cocoa
1/4 cup all natural peanut butter
1/3 cup soy milk
1 egg
1/4 tsp baking soda
1/4 cup cream cheese (optional)

Filling:
1/4 cup semi-sweet chocolate chips
1/4 cup creamy peanut butter
1/2 tbsp unsweetened cocoa
Dash of almond milk

For the filling:
Put all ingredients in a microwave safe bowl and heat up in microwave until smooth and stir together.

For the cupcakes:
Mash bananas and mix all other ingredients in. Fill up 1/3 with the dough and place a dollop of the filling in the middle of each cupcake and cover up. Bake for about 20 minutes at 350 degrees F




Cream cheese and chocolate surprise!
